Keto Omelet: In a Mug or Waffle Maker

This is just a quick overview of how to make a keto waffle omelet. For the recipe in detail, scroll to the recipe card at the end of the post.
Ingredients

• Non-stick cooking spray
• 1 tbsp red onion finely chopped
• 2 tbsp red pepper finely chopped
• 1/4 cup fresh spinach chopped
• 1 large egg
• 1/4 cup shredded mozzarella cheese
• 1/4 cup shredded cheddar cheese
• 1/8 tsp salt
• 1/8 tsp pepper
  

Instructions

1. Mug Version
2. Lightly spray the inside of a microwave-safe mug with non-stick cooking spray.
3. Crack egg into mug and beat with a fork.
4. Add cheese, salt, and pepper, and mix thoroughly to combine.
5. Then add veggies and mix thoroughly so the egg/cheese mixture is evenly distributed.
6. Microwave for 1 minute, 45 seconds on high and check for doneness. If not yet cooked through, continue to cook in 15-second increments, keeping in mind that the high cheese content of this omelet will make it look a bit wet when hot. (When cooled off, it will firm up.)
7. Let cool for 3-5 minutes before digging in.
